We present a home-style take on a beverage featured on a new menu. It's a batch premix which is packed full of essence of a Christmas time, rendering it perfect for hosting a holiday party. Save the extra syrup you can use for brunch beverages, puddings, or for more rounds of this cocktail.

Ingredients for the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Put all the items into a pot, heat until it reaches a simmer, agitating so the sugar melts. Then, remove from the stove and leave to reach room temperature fully. Pour to a sealable bottle, cap it and store in the fridge, it can be stored for up to one month.
To make Batch Mix: Pour every liquids into one sizeable container, let it rest for an hour, then pass it through best through muslin, to ensure it's completely strained.
For serving: Add 85ml from the cocktail base into a mixing glass containing ice, and stir lightly for one minute to chill. Strain to a cold coupe glass or similar, garnish with some cranberries and complete it with a light spray with the mandarin essence above the glass.
